American Hipster: Thunder Heart Bison

More and more, restaurants in Austin are making an effort to use locally sourced ingredients. Thunder Heart is not only local, but it is humane and certified by the Animal Welfare Institute as Welfare Animal Approved.

When Hugh Fitzsimmons describes killing the bison, you hear his voice catch. The gravity of taking a life is not lost on him. For those of use who eat animals, ALL of our meat should come from organic and ethical farms, one where the lives of animals are respected.

I will make it a priority to stop by the Thunder Heart food truck next time I’m hungry. (So, like, 20 minutes from now.) You can find it on West 5th, right by Black Swan Yoga.
